Beef stroganoff

Beef Stroganoff is a classic Russian dish made with sautéed beef, onions, mushrooms, and a rich sour cream sauce. Here's a traditional recipe:

Ingredients:

  • 1 lb (450g) beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Egg noodles or rice, for serving

Instructions:

  1. Prepare the beef: Season the beef slices with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the beef in batches and cook until browned on both sides (about 2 minutes per side). Remove the beef and set aside.

  2. Cook the vegetables: In the same skillet, add butter and melt over medium heat. Add the chopped onion and sauté until softened (about 4-5 minutes). Add the garlic and mushrooms, cooking until the mushrooms release their moisture and are golden brown.

  3. Make the sauce: Sprinkle the flour over the onion-mushroom mixture and stir well to coat. Gradually add the beef broth, stirring constantly to avoid lumps. Add the Worcestershire sauce and mustard, and let the sauce simmer for 5 minutes, stirring occasionally, until it thickens.

  4. Finish the dish: Lower the heat and stir in the sour cream. Return the cooked beef to the skillet and gently simmer for 2-3 minutes, just until the beef is heated through. Avoid boiling the sauce, as it may cause the sour cream to curdle.

  5. Serve: Garnish with fresh parsley and serve over egg noodles or rice.
